PREPARATION
The shallots are peeled and cooked “al dente” (cooked to be firm to the bite). They are then preserved with oil and a dash of vinegar and white wine.
Excellent in Italian appetizers. It can be paired with fish, perhaps a grilled turbot or even some good blue fish.
