It is the iconic dish of the starred restaurant L’Erba del Re. Inspired by the Emilia-Romagna region tradition, created with respect for the gastronomical cultural source and made into a light synthesis capable of enhancing the richness of each element.
Among the first creations of chef Luca Marchini, over the years this dish has become a distinctive feature of his cuisine. This timeless dish remains on the menu today, popular not only with us but with our discerning clientele.

Passatello ‘03 is born:
Proposing Passatello ‘03 means offering an important part of L’Erba del Re story.
From this iconic dish we have collected the incredible and delicate flavour of its ragout, presenting it now as a unique and intense experience to be savoured in the warmth and comfort of one’s home.
This is the ragout that has captivated the palates of our clientele and that is still appreciated today as one of the most satisfying recipes for its reassuring authenticity.

What to expect:

The sensation that this special ragout offers is enveloping,the flavour reassuring and round, the satisfaction on the palate is extraordinary and rendered with the unfailing balance of Marchin’s signature cuisine.

Opening this special preserve means approaching a complex cuisine,but with an immediate impact that gently invades the palate.

It is a recipe created with raw materials of excellent quality, prepared with ingredients which are at times unexpected and combined in an original way. It is not just a simple vegetable base,but a balanced combination of flavours such as rum, bay leaves, rosemary and shallots that enhance the entire mixture.

In this recipe you will find: chicken thighs 60.5%, rum 15%, shallots 10%, raisins 7.5%.

You will notice the aromas, the different consistencies, the sweet notes of the raisins, the roundness of the thigh and all those elements that together offer a delicious, rich yet delicate ragout.

Just a first taste will be enough to discover that Passatello ‘03 is different from any other preserve, an authentic and unique pleasure that you will want to share on your table on special occasions.

Our suggestion for you:

The best suggestion we would like to give you is to combine these precious 185 gr with a short and porous pasta capable of absorbing the richness of each element (perhaps a good artisan Passatello) for a tasting fit for a king,or rather DA RE, intended for two people.

Passatello ‘03 is in fact a taste of starred cuisine that pays tribute to the Emilia-Romagna region and that today chef Marchini offers for a different context to the most curious and attentive fans of Haute Cuisine.
